For Arizona, there are a couple of "low-chill" (so called, see: http://www.davewilson.com/community-and-resources/videos/high-chill-apples-low-chill-orange-county and http://www.kuffelcreek.com/applenursery.htm ) apples that are sold at many of the nurseries / box stores, that do exceptionally well in AZ. These are Anna and Dorsett Golden. Both grow extremely well, love the heat, and fruit prolifically.

In 2018, my Anna is ~10 ft tall. Was a small 3 gallon tree when I bought it 2016. And would be even larger now, except that I pruned it severely in 2017 to make room for lots of grafting locations. As a grafting interstem Anna is extremely vigorous, gives a lot of energy to the scion, and takes very well (100% takes, 15 out of 15).

If you are going to plant only one apple tree in Phoenix, it's hard to beat an Anna. The apples are relatively small (however you can thin to increase size), yellow-green, medium sweetness, and fairly tart (not nearly as tart as Granny Smith though). It is a refreshing summer apple.
